the versatility of Barbera d’Asti: dinner and guided tasting

Sommelier Martina Doglio Cotto will be guiding participants of the dinner illustrating the tha special features of Barbera d’Asti and explaining the pairing with the special dishes prepared by the Ristorante Vineria la Signora in Rosso. Dinner served at the table.

In collaboration with the Consorzio Barbera d’Asti e Vini del Monferrato, represented by the Chairman, Filippo Mobrici. With the participation of Mauro Damerio, Chairman of the Enoteca Regionale di Nizza.

Barbera d’Asti is a remarkably versatile wine. Matured in steel and drunk while young, it can be the perfect companion for a multitude of dishes. Ideal with both “surf” and “turf” foods, spanning traditional to more innovative cuisine, from local products to contemporary ethnic and fusion styles.
Its freshness and reduced tannin, along with the lively notes in the bouquet, make it perfect for a wide variety of occasions. Ideal for uncomplicated situations, like last-minute dinners with friends, or in those moments when you aren’t quite sure which wine to pair with a specific dish.

This gave us the idea for a fresh, non-traditional dinner, inspired by seasonal ingredients and also by popular dishes that appear frequently on menus, but always featuring local produce. Then we had another idea, to dedicate it to Paolo Conte, the singer-songwriter from Asti who sings about “exotic” worlds both near and far, about scents, smells and images of travelling. The ultimate aim will be to go on an exploration together, seated at the table, because conviviality is always a source of inspiration.

Ravioli filled with courgettes and Seiràss (salted ricotta) dressed with saffron and ginger

Chiecken and Fassona beef fajitas with peppers, onions and spices served on tortillas

“Un gelato al limon”

“Tonda Gentile Piemonte” hazelnut ice cream with Barbera chutney, cooked over a low flame for two days.
